Apple Cake Recipe

Thanks to everyone who came a-wassailing this afternoon – I think we just managed to stay ahead of the rain. Anyway, some of you asked for an apple cake recipe. Several of us used the one below: it does end up differently depending on how small you chop up the apples. The book says that it’s great eaten warm with clotted cream…

225g (8oz) SR flour                                                                                                                           100g (4oz) butter                                                                                                                              500g (1lb) chopped and peeled cooking apples                                                                                  100g (4oz) sugar                                                                                                                                        2 eggs, beaten (may need a little milk if mix is dry, but it is a stiff mixture as the apples release juice during baking)                                                                                                           25g (1oz)  brown sugar

Sift the flour into a bowl and rub the butter in to a breadcrumb consistency. Mix in the apples, sugar and eggs. Turn into a 20-23 cm (8-9″) round and greased cake tin and sprinkle with the brown sugar. Bake in a pre-heated oven at 200C oven for 30-40 minutes. Allow to cool slightly before turning out.
